I know what you mean, i do prefer them too, but i can apply that to local Portuguese bars/pubs.
The "Irish" Pubs we have here are in major cities, and they don't have much that atmosphere you talk, because they are not traditional here, they are something "outside", so you see a lot of tourists there, and foreign people living here go there a lot of times to see football maches from UK.
So they tend to be noisy.

Guinness can only taste the way it does when made from the water that has filtered through Ireland's peat bogs.
Same goes for Tetley's beer. Unless it made from the water that filters through the heather covered North Yorkshire Moors, it just doesn't taste the same. Kinda makes traditional Ales a personal experience to the area you live in. Shoving it in cans or bottles & transporting it, is the same as Silicon in tits for me.
